Requiem for a Dream. Fight Club and Collateral are pretty good too.

i just saw Tuhmbsucker and thought the soundtrack was awesome, all of it was done by The Polyphonic Spree but it's not always as cheerful as the regular Spree, which is good.
Also there are several Elliott Smith tracks, 2 of which (i think) were unreleased until now.
By the way my favorite soundtrack would probably be Big Lebowski (because the songs just fit so damn perfectly) and Pulp Fiction for the same reason (only it doesnt sound as good apart from the film)

Sergio Leone's spaghetti westerns.

that's not a sound track, that's motion picture score, meaning the music was made specifically for the movie.

Almost Famous
Pretty much any Wes Anderson movie ( even though i have yet to like any of which i have seen )

Most anything Tim Burton (Danny Elfman is a god)
Most anything Quentin Tarentino
Most anything John Williams has done
And that's about all I can think of right now.
