Why not beat a game at a leisurely pace and enjoy it?

Because once you beat a game so many times, it becomes kinda boring, so some people want to add challenges, like "beat the game under x amount of time", or "beat the game without taking any damage". The Rockman Zero series actually rewards stuff like that, as well as some other games.
