i've been thinking for days about what i'll take to a family reunion this saturday. i'm blaming it on the pregnancy hormones 'cause my usual m.o. is all about grabbing some chips and two-liters on the way. but no, this time, i'm looking through cookbooks for good casserole recipes and pie recipes and bread recipes.
i need something that won't taste yucky if it's not still really warm when it's eaten. there's one really good-sounding recipe called "taco bake casserole," with layers of cream cheese and taco-seasoned hamburger and salsa and velveeta. jesus. one serving is probably a billion calories. :eek
i think i'm gonna make this strawberry pie with a graham-cracker crust and whipped cream mixed with eagle-brand milk stuff, covered in fresh strawberry slices. i love that one and haven't made it in years.
sometimes i think i'm losing my mind. and then i remember that i can't remember the last time i actually had it.

Sadie, I have this really neat chicken casserole that doesn't take much to make. It really sounds gross but is something that everybody asks me to make ..every...f@cking...time.
Preheat oven 350
Take five or six frozen (fresh is better) chicken breasts and place in a casserole dish.
Mix 2 cups of mayonaise (yes!)
With two cups of Parmesian cheese.
Spread over the Chicken Breasts after it is mixed.
Bake for one hour.
Serve warm.
I swear the family thinks I'm the chutzpah!

cool. but it's for a covered-dish thingy, so whole chicken breasts wouldn't really work. could you use chopped-up chicken breast???

well, thanks, but i decided against a casserole altogether. i made two big ol' strawberry pies that went fast. i'll try your recipe at home this weekend.

Sadie, I just had a second thought; maybe that chicken/mayonaise dish might not be good for your pregnancy. I hadn't thought about it before.
Hopefully you didn't try it before consulting with you OB.

Those strawberry pies are the excellence. Not that I've had yours, but I've had some before made by my family.

Mayo and parmesian cheese is like some mexican wonder twin thing. There's this guy who rides around on a bike that has a chest on it and he has corn and he makes it by slathering on mayo, parmesian and sometimes hot sauce. They're surprisingly good.

Cooking the mayo and chicken together? It's awesome for non pregger folks but if it's left out too long after it's cooked (aka picnic), it becomes an outbreak of botulism. I'm just back tracking and making sure it's okay for you, in your condition. Because it's really good. Worth sitting on the shitter for 38 minutes after you've had an old batch.

As long as you put a cover on it after you cook it there's no feasible reason why you should get botulism.
