It's probably more of a crunch than a splat. Or at least, if there is a splat the crunch will drown it out. :)

seen some videos. a guy that fell from around a 5 stories high building stayed almost intact but you can clearly hear the hard snapping noise when he hits the ground :(
people that fell from the twin tower buildings just probably splattered. it's really weird to see a person without a parachute that long in the air though

Tom Petty's song "Mary Jane's Last Dance" is about a girl that jumped off the tallest building in Indianapolis. My dad x-rayed her just to see what her skeleton was like. He said that everywhere you touched her body was like a sponge.
