Why do people say "Rome wasn't built in a day"? I appreciate it wasn't, but name me one city that was.

Perhaps the saying has its routes in Byzantine culture. It's like how people say "call a spade a spade". You could say anything in place of spade but the saying is most probably an agricultural reference and as such it's stuck that way.
