I don't know about shoes, but I have moisture wicking socks. the fabric is slightly thinner on the top of the foot, so my foot sweat evaporates more easily, then diffusion (or is it osmosis?) pulls the moisture from the thicker fabric to the thinner, and that moisture evaporates etc.
