aaaaanyway.

I'm making baked chicken and rice with roasted red pepper and garlic sauce. I loves me the hell out of some roasted red bell pepper...I do my own in the oven and save money. Just wash the pepper, pat it dry, cut it in half and remove the membrane and seeds, then put it facedown on a cookie sheet in an oven on broil. Take it out when the skin is blackened, then sweat it by sticking it in a bowl with some lemon juice and cover it with foil for a few minutes. The skin should peel right off, then you have lots of peppery goodness.

I slice it and put it on sandwiches, puree it in a food processor with garlic and olive oil for a sauce. Hell, I eat it straight.

I caught a peanut butter melt on fire in the toaster oven, so I got to see what peanut butter flambe tasted like. The answer....not good. Kind of like a flame-broiled burger, when I was expecting warm, melty peanut butter.

It was actually fantastic. The deviled egg sandwich was actually one hard boiled egg, sliced, put on a mayo-ed up potato roll, then put mustard and paprika on the top half.

Black forest ham is delicious. Bacon is good if its crispy. Truffles are pretty good.

I've been trying to cook more. Attempted to make Chicken Parmesan last night but forgot to bread the chicken first. The taste wasn't terrible but not very flavorful.

took willie's suggestion and added a little smoked tabasco. also halved the cream cheese content and used a larger chicken breast. the broth i've been boiling this in has been on the stove for 2-3 days now and i cook brussels sprouts and chicken in it, adding water each time but not dumping it. the bowl is covered when not in use. seems to add to flavor.

I've been experimenting with swapping out quinoa for brown rice and wholegrain english muffins for bread/crusts/etc with excellent results so far. Had chicken etoufee with quinoa for one meal, then used the leftovers for po boys on the english muffins.

I've also found out that wholegrain english muffins make omggood mini pizza crusts and sandwich buns.

I'm having the healthiest egg muffins I can muster...wholegrain toasted muffins (100 calories apiece), egg circles cut from an Egg Beaters omelet with a biscuit cutter, and Morningstar Farms veggie bacon. God, I love that stuff.

As an aside, try marinating very thin strips of chicken in greek yogurt before cooking. You'll have to watch as it will burn more easily, but the flavor is amazing. I routinely load the yogurt with hot sauce and/or spices for the marinade.

Tonight I'm going to make some black bean quesadillas that I couldn't get enough of over the weekend. Very inexpensive to make and as good as mexican pizzas, but healthy.
