what i reccomend you start with is prolly the greatist hits (

There are a lot of Zappa albums you have to work for, or be familiar with his old stuff in order to appreciate it. So don't get anything like Lumpy Gravy or Weasels Ripped My Flesh yet cuz you will HATE IT. If i could suggest anything, get Hot Rats ooooooooooor One Size Fits All.
