it could be that. If you just let the ginger soak in some vinegar for a while it should soften it up and help to "cook" it. i dunno though that stuff is delicious.
Also i think it has orange juice in it but maybe thats just from the vinegar
also my parents found a storebought ginger dressing that tastes fairly similar to the one in restaurants. Ill see if i can find the name
