I'm a bit of an expert in the making-foods-different-colors field (no, really) and I'm fairly sure you can. I don't think it will absorb as well because some of the acids in the kool-aid powder might be speeding the process along, but I am confident that you can turn ordinary pickles red without too much of a change in taste.
But imho, the taste is part of the adventure.
