Also, if you direct your attention to Gamespot, they have a few videos and screenshots of various games and tech demos. The majority (if not all), are rendered in real time, meaning this is technically what actual gameplay will look like on the PS3. It is worth mentioning that games MIGHT not look this good right away though (memory and data space will be used up by actual gameplay mechanics, so not as much room or time to refine the graphics that much).
Just look at how the PS2 games looked at launch, and how they look now. RE4, Shadow of the Colossus, and God of War are prime examples of showing how the graphical limits of the PS2 aren't easily reached. So while the PS3 launch games MAY not look as good as these demos let on, they will eventually.
Also, Final Fantasy 7 fans, there is a tech demo of FF7's FMV intro on the PS3. Except it's been completely redone with the graphic style of Advent Children, and it's rendered in real-time.
