That's how you're actually supposed to sleep. sleeping without dreams is wholesome and complete(very healthy, supposedly), sleeping with dreams means you're not sleeping properly. The theory being that sleeping with dreams means your mind is awake, and the goal of sleeping being that of resting the mind and all human bodies.
If you want dreams try sleeping after 2, theoretically that might work.

But....but....you always dream - every night, but its only one period of the sleep cycle. Whether you remember or not, you always dream. You'd go nutsaroony very quickly if you didnae.

Yeah, just because you can't dream in deep sleep doesn't mean that when you don't dream you are in a deep sleep from the moment you hit the pillow. The reason you don't remember your dreams is that you only dream at the begining of your sleep and then go into deep sleep and forget it, the only time you remember your dreams is if you gop through the stage of semi-sleep before you wake. People who take 10minute naps and such will dream a lot.
