Here are a few of mine:
Title music from Halo, main theme from Zombie Smashers X, and the Wind Temple boss music in Windwaker.

Megaman X has some "phat jams", as the kids call them. Also do not forget the almighty Castlevania, Lament of Innocence and CV3 in particular. Disgaea also had some memorable ones. So memorable that after 200 hours of playtime, i have absorbed them like the blob. I could recite the entire OSV to you. :-/

i would love to have ryu's theme from marvel vs capcom (the re-done version of the sf2 theme).
