Final Fantasy 5. Gilgamesh. People who never played FF5 until it came out on Playstation loved this track years before that.

The Demon King from Final Fantsy Mystic Quest...the game sucks, but the music is good.

I say the music of the Act 1 Bosses (or Mini-bosses if you must) in Sonic 3 because it came as a surprise to me to hear a soundbite of a rapper yell "COME ON" in the middle of my Sonic Game.

Fave boss music came from Chrono Trigger. The one where you're fighting BIG bosses is my favorite.
